Dandelion Greens and Bacon Recipe
Dandelion greens and bacon make for a delicious and savory side dish. Here’s a simple recipe for you to enjoy:
Ingredients:
- 4 cups fresh dandelion greens, washed and chopped
- 4-6 slices of bacon, chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup chicken or vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Red pepper flakes (optional, for a bit of heat)
- Lemon wedges for garnish (optional)
Instructions:
- Start by cleaning the dandelion greens thoroughly. Remove any tough stems, and chop them into bite-sized pieces. Set them aside.
- In a large skillet or frying pan, heat the olive oil over medium heat. Add the chopped bacon and cook until it becomes crispy, about 5-7 minutes.
- Once the bacon is crispy, remove it from the pan and place it on a paper towel-lined plate to drain excess grease. Leave about 1-2 tablespoons of bacon fat in the pan.
- In the same pan with the bacon fat, add the chopped onion and garlic. Sauté them for 2-3 minutes or until they become fragrant and translucent.
- Add the chopped dandelion greens to the pan, along with a pinch of salt, pepper, and red pepper flakes if you like a bit of spice. Sauté the greens for about 3-5 minutes or until they start to wilt.
- Pour in the chicken or vegetable broth and cover the pan. Reduce the heat to low and let the greens simmer for another 5-7 minutes or until they are tender.
- Once the dandelion greens are tender, uncover the pan and cook for an additional 2-3 minutes to allow any excess liquid to evaporate.
- Stir in the crispy bacon pieces and mix everything together. Taste and adjust the seasoning if needed.
- Serve the dandelion greens and bacon hot as a side dish. You can also squeeze a bit of fresh lemon juice over the top for a burst of citrus flavor, if desired.
Enjoy your dandelion greens and bacon as a tasty and nutritious side dish!
