Ingredients:

  • 4 cups fresh dandelion greens, washed and chopped
  • 4-6 slices of bacon, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chicken or vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Red pepper flakes (optional, for a bit of heat)
  • Lemon wedges for garnish (optional)

Instructions:

  1. Start by cleaning the dandelion greens thoroughly. Remove any tough stems, and chop them into bite-sized pieces. Set them aside.
  2. In a large skillet or frying pan, heat the olive oil over medium heat. Add the chopped bacon and cook until it becomes crispy, about 5-7 minutes.
  3. Once the bacon is crispy, remove it from the pan and place it on a paper towel-lined plate to drain excess grease. Leave about 1-2 tablespoons of bacon fat in the pan.
  4. In the same pan with the bacon fat, add the chopped onion and garlic. Sauté them for 2-3 minutes or until they become fragrant and translucent.
  5. Add the chopped dandelion greens to the pan, along with a pinch of salt, pepper, and red pepper flakes if you like a bit of spice. Sauté the greens for about 3-5 minutes or until they start to wilt.
  6. Pour in the chicken or vegetable broth and cover the pan. Reduce the heat to low and let the greens simmer for another 5-7 minutes or until they are tender.
  7. Once the dandelion greens are tender, uncover the pan and cook for an additional 2-3 minutes to allow any excess liquid to evaporate.
  8. Stir in the crispy bacon pieces and mix everything together. Taste and adjust the seasoning if needed.
