Grilled Trout and Vegetables

Grilled trout and vegetables make for a delicious and healthy meal that’s perfect for summer gatherings or a weeknight dinner. Here’s a simple recipe to help you make grilled trout and vegetables:

Ingredients:

For the Trout:

  • 2 whole trout, cleaned and gutted
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, thinly sliced
  • Salt and black pepper, to taste
  • Fresh herbs (such as parsley, dill, or thyme), for garnish

For the Vegetables:

  • Assorted vegetables of your choice (such as bell peppers, zucchini, yellow squash, mushrooms, onions, cherry tomatoes)
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • Optional: additional herbs or seasonings of your choice

Instructions:

  1. Prepare the Grill:
    • Preheat your grill to medium-high heat (about 400-450°F or 204-232°C). Make sure the grill grates are clean and lightly oiled to prevent sticking.
  2. Prepare the Trout:
    • Rinse the trout under cold water and pat dry with paper towels. Score the fish on both sides with diagonal cuts to help the heat penetrate and cook evenly.
    • In a small bowl, mix together the olive oil, minced garlic, salt, and black pepper. Rub the mixture all over the trout, inside and out.
    • Stuff the cavity of each trout with lemon slices and any additional herbs or aromatics you like.
  3. Prepare the Vegetables:
    • Cut the assorted vegetables into bite-sized pieces or slices, ensuring they are all roughly the same size for even cooking.
    • In a large bowl, toss the vegetables with olive oil, salt, and black pepper. You can also add additional herbs or seasonings according to your taste preferences.
  4. Grill the Trout and Vegetables:
    • Place the seasoned trout directly on the grill grates, spacing them apart to allow for even cooking. Grill the trout for about 4-5 minutes per side, or until the flesh is opaque and easily flakes with a fork.
    • While the trout is cooking, place the seasoned vegetables in a grill basket or on a piece of aluminum foil directly on the grill grates. Grill the vegetables for about 8-10 minutes, or until they are tender and lightly charred, stirring occasionally for even cooking.
  5. Serve:
    • Once the trout and vegetables are cooked, transfer them to a serving platter. Garnish the trout with fresh herbs and lemon wedges if desired.
    • Serve the grilled trout and vegetables hot, alongside your favorite side dishes such as rice, quinoa, or crusty bread.
  6. Enjoy:
    • Enjoy your delicious grilled trout and vegetables with family and friends, savoring the smoky flavors of the grill and the freshness of the ingredients.

This recipe is versatile, so feel free to customize it with your favorite vegetables and seasonings. Grilled trout and vegetables are not only delicious but also nutritious, making them a perfect choice for a healthy and satisfying meal.
