Duck à l’Orange

Ingredients:

  • 2 duck breasts
  • Salt and pepper to taste
  • 1/2 cup freshly squeezed orange juice
  • 1/4 cup chicken broth
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon grated orange zest
  • 1/2 teaspoon cornstarch, mixed with 1 tablespoon water
  • Fresh orange slices for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Score the skin of the duck breasts in a crisscross pattern. Season with salt and pepper.
  3. In a large ovenproof skillet, place the duck breasts skin-side down over medium heat. Cook until the skin is crispy and the fat has rendered, about 6-8 minutes.
  4. Turn the duck breasts over and transfer the skillet to the oven. Roast for 5-7 minutes for medium-rare, or longer if desired. Remove and let rest.
  5. In a small saucepan, combine the orange juice, chicken broth, honey, balsamic vinegar, soy sauce, and orange zest. Bring to a boil and reduce by half.
  6. Stir in the cornstarch mixture and cook until the sauce thickens.
  7. Slice the duck breasts and serve with the orange sauce. Garnish with fresh orange slices.
