Duck à l’Orange
Ingredients:
- 2 duck breasts
- Salt and pepper to taste
- 1/2 cup freshly squeezed orange juice
- 1/4 cup chicken broth
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1 tablespoon soy sauce
- 1 teaspoon grated orange zest
- 1/2 teaspoon cornstarch, mixed with 1 tablespoon water
- Fresh orange slices for garnish
Instructions:
- Preheat the oven to 400°F (200°C).
- Score the skin of the duck breasts in a crisscross pattern. Season with salt and pepper.
- In a large ovenproof skillet, place the duck breasts skin-side down over medium heat. Cook until the skin is crispy and the fat has rendered, about 6-8 minutes.
- Turn the duck breasts over and transfer the skillet to the oven. Roast for 5-7 minutes for medium-rare, or longer if desired. Remove and let rest.
- In a small saucepan, combine the orange juice, chicken broth, honey, balsamic vinegar, soy sauce, and orange zest. Bring to a boil and reduce by half.
- Stir in the cornstarch mixture and cook until the sauce thickens.
- Slice the duck breasts and serve with the orange sauce. Garnish with fresh orange slices.
