Wild Boar Chili

Ingredients:

  • 2 pounds ground wild boar
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Shredded cheese, sour cream, and chopped green onions for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium-high heat. Add the ground wild boar and cook until browned.
  2. Add the onion, garlic, and bell peppers. Sauté until softened.
  3. Stir in the kidney beans, black beans, crushed tomatoes, tomato paste, chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 1 to 1.5 hours, stirring occasionally.
  5. Serve hot, garnished with shredded cheese, sour cream, and chopped green onions.
