Wild Boar Chili
Ingredients:
- 2 pounds ground wild boar
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- Shredded cheese, sour cream, and chopped green onions for garnish
Instructions:
- In a large pot, heat the olive oil over medium-high heat. Add the ground wild boar and cook until browned.
- Add the onion, garlic, and bell peppers. Sauté until softened.
- Stir in the kidney beans, black beans, crushed tomatoes, tomato paste, chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 to 1.5 hours, stirring occasionally.
- Serve hot, garnished with shredded cheese, sour cream, and chopped green onions.
