Wild Boar Tacos

Ingredients:

  • 2 pounds wild boar shoulder, cut into chunks
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup orange juice
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Corn  or flour tortillas, either soft or hard, to your taste.
  • Toppings: chopped cilantro, diced onion, sliced radishes, lime wedges, salsa, pineapple

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the wild boar chunks and brown on all sides. Remove and set aside.
  2. In the same pot, add the onion and garlic. Sauté until softened.
  3. Return the boar to the pot. Add the chicken broth, orange juice, chili powder, cumin, smoked paprika, cinnamon, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 2 to 3 hours, or until the meat is very tender and easily shredded.
  5. Shred the meat with two forks and mix it with the cooking liquid.
  6. Warm the corn tortillas and fill them with the shredded wild boar.
  7. Top with chopped cilantro, diced onion, sliced radishes, lime wedges, and salsa.
