Wild Boar Tenderloin with Apple Cider Glaze
Ingredients:
- 2 pounds wild boar tenderloin
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup apple cider
- 1/2 cup chicken broth
- 2 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
Instructions:
- Preheat your oven to 375°F (190°C).
- Season the wild boar tenderloin with salt and pepper.
- In a large ovenproof skillet, heat the olive oil over medium-high heat. Sear the tenderloin on all sides until browned.
- Transfer the skillet to the oven and roast the tenderloin for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
- Remove the tenderloin from the oven and let it rest.
- In the same skillet, add the apple cider, chicken broth, apple cider vinegar, honey, Dijon mustard, garlic, and thyme. Bring to a boil, then reduce heat and simmer until the glaze thickens.
- Slice the tenderloin and serve with the apple cider glaze drizzled over the top.
