Pan-Fried Wild-Caught Trout with Almond Butter

Ingredients:

4 wild-caught trout fillets
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
4 tablespoons unsalted butter
1/4 cup sliced almonds
2 tablespoons fresh lemon juice
2 tablespoons fresh parsley, chopped

Instructions:

In a shallow dish, combine the flour, salt, and pepper. Dredge the trout fillets in the flour mixture, shaking off any excess.
Heat the olive oil in a large skillet over medium heat. Add the trout fillets, skin-side down, and cook for 3-4 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.
In the same skillet, melt the butter over medium heat. Add the sliced almonds and cook until they are golden brown, about 2-3 minutes.
Stir in the lemon juice and parsley, then spoon the almond butter sauce over the trout fillets.
Serve with steamed green beans or a light salad.
